"So Shriya, shall we start?"


"Yes auntie, please elaborate today's discussion as milk being enemy is a bit confusing."


“Yes of course, milk is very important as per Ayurveda. It is sweet to taste and digestion (vipaka) , viscous (pichchila) , cold in nature (sheeta), with good fat content (snigdha) , heavy to digest (guru),mild laxative (saraka). All these properties nourish all seven dhatus. Ayurveda has a unique concept of *Oajas*. This *Oajas is as essence/concentrate of seven dhatus viz Rasa,rakta,mansa,meda, asthi,majja and shukra namely. This *Oajas* has similar qualities that of milk. Hence milk it really important for our nourishment.  An infant is accustomed to mother's milk from birth, so when the child is six months old, we usually opt for cow milk when we start process of weaning. That's why milk is also called ' *Aajanmasatmya* '. Cow's milk is beneficial for intellect and invigorating.hence it is advicable for people with strenuous jobs be it physical labor or mental exercise due to study-office related work.”


"They also consume buffalo milk, don't they?"


"Yes, buffalo milk contains more fat than cow's milk, so it is _difficult to digest, heavy (guru),more cold producing (sheetal) and kapha producing._. Therefore, people who feel hungry frequently and suffer from insomnia can take buffalo milk with medical advice. ”


"*But why is milk being called white enemy even though it is so good for health* ?"


“Because when all these qualities were listed in *Ayurveda, there were native cows breeds only, in India* . Indigenous cows are white or brown colour and most importantly, these cows have the *hump* . Earlier in different states across India, there were 38 different breeds of cows like Gir, Rathi, Haryanvi, Devani, Dangi, Kandhari, Khillari. These breeds still exist today but the consumption of milk from these breeds is ralatively low. Due to their low milk yield and duration, their use for milking declined gradually and at the same time the use from foreign breeds like Jersey, Holstein Friesian increased in India to achieve more milk production. In order to have more, wrong routes like diluting milk with water, adding starch like arrowroot, caustic soda, urea and other harmful chemicals are chosen. Due to high demand and low supply of milk in India, such malpractices occur frequently and are difficult to control. In some places, the milk producers give *hormone injections* to the cows to increase milk production or *antibiotics* are already added to their food to prevent them from getting sick. These harmful components of hormones and antibiotics enter cow's milk too and eventually into the body of the consumer. The same happens with buffalo's milk too. Nowadays a process called Homogenization is used wherein the fat globules in the milk are reduced to smaller size. This makes the milk thicker and Milk does not spoil quickly. So The milk quality appears better. But This milk does not get cream.also because of the smaller size, these fat particles, get easily absorbed into the blood which increases the chances of accumulatuin of these particles  in the blood vessels. Also,due to the process of homogenization, natural amount of vitamins D and A are depleted. So sometimes Vitamin D and A are added to milk for fortification but it cannot be guaranteed that it will be absorbed in the body. ”


*This is scary !! And what is A2 aunty* ? ”


“A2 and A1 are types of a protein called beta casein which are found in cow's milk. A2 protein is found in cow's milk of Indian breed and A1 is found in cow's milk of foreign breed. Some research suggests that A1 beta casein may cause diseases such as diabetes, heart disease, and autism. ”


“ *So what to do now* ?


"To avoid this, non homogenized milk of native cows can be used. Milk can be procured from a reliable vendor to avoid adulteration of milk. Considering one's metabolism and with medical consultation one can decide whether to consume cow milk or buffalo milk. When drinking milk daily, add *a little turmeric powder or dried ginger powder* and bring to boil. But milk is heavy for digestion so people who consume milk daily should incorporate some or other type of physical exercise in their routine. Also one should have proper digestive fire (agni) to for digestion and assimilation of Milk. Drink it as a mid meal or proper meal. Do Not drink meal with heavy breakfast or full meal. Patients with prameha and madhumeha are advised to refrain from Milk and milk products they must consult with their vaidya regarding milk consumption.

"I have collected a lot of interesting information. These five foods are the usual, traditional and wholesome in our diet. But due to misconceptions like brown/dull means bad and white means purer/better and gor the insistence on more processing, we *lost their goodness and invited unnecessary diseases*. We lost the nutritional value of the food for sake of  easy-to-cook/ instant food. We started eating unhealthy food in our household for our desire for tasty on palate food . As a result of all this, indigenous varieties and seeds are getting forgotten. Therefore, our main goal should be to break this vicious cycle and bring our traditional methods back into the mainstream. ”
