"Snigdha aunty, while reading about sugar today, I came across the term _sulfurless sugar_. What is it?"
“The sugarcane juice that is extracted mechanically, contains many other elements/impurities such as bits of hard skin, sticky substances like glue, other fibrous plant material which may hinder the process of sugar formation and all these substances cannot be removed by simply straining. Also, when making sugar from sugarcane juice, it is boiled and reduced. So its color too darkens. As is the color of jaggery. Now to make these sugar crystals totally white, to increase its shelf life(to make it last longer) and to remove the aforesaid impurities Sulfur is used. Sometimes if the sugarcane crop is harvested prematurely, then also sulfur is used. This process is called _Double sulphatization_. Sulfur is used here is mainly as * sulfur dioxide *. And in this process traces of sulfur remain in sugar crystals. This sulfur can cause many ill effects on the body. These sulfur particles, when absorbed into the body, damage the cell membranes. This is because when this sulfur dioxide reacts with water in the body forms H2SO3 / H2SO4. This causes respirator problems like cough,cold, difficulty in breathing. For people with frequent cough and cold, children, asthmatics, for patients with respiratory related diseases like COPD, LUNG FRIBOSIS, INTERSTITIAL LUNG DISEASE, this white sugar is a poison. So when we call sugar as foe, it is this white sugar that is working as poison on your body. Not only people with pre-existing respiratory conditions but also healthy people without any symptoms suffer from constant consumption of such sugar. Also, the sulfur emitted from these sugar factories further causes air pollution. ”
"Oh my God, all this is quite complicated."
“Yes, in case of sulphuless sugar the sludge is purified using calcium salts“
"But then how do we identify what process has been followed?"
"See, sugar purified using sulphur is called _Plantation White Sugar _ and for sulphurless sugar, there is a mention on the packaging cover about being sulphurless sugar as well as it is called _Refined Sugar _. Now there is a third type which is *organic sugar *, in this type organic means natural substances are used to purify the sludge. Also Raw Sugar, Khandsari (Brown Sugar) are also made organically. These types can be used in cooking. ”
"Well then, if you use organic sugar, there's no tension, is there?"
"Yes, it can go with it, but what will you do about your favorite desserts available in market?" The plantation white sugar is cheap and is commonly used in almost all sweets like cakes, mousses, donuts, ice cream, desserts. ”
"Hmm, that means I need to be cautious with eating sweets.... well, are there any benefits of sugar in Ayurveda?"
"Yes, there is sugar in Ayurveda. But this sugar is sugar derived naturally from sugarcane juice. According to Ayurveda, Sugar is of sweet taste-vipaka, pacifies vata and putra disha, reduces inflammation and heat, gives instant energy, satiety as Madhura (Sweet) rasa strengthens all seven dhatus,when consumed in moderation. But if consumed in over doses for longer period can cause obesity (sthaulya), Prameha (diabetes), loss of appetite and also recurrent boils all over body which fail to heal. And there is also a risk of sugar addiction. ”
* “Sugar Addiction * ??? What do you mean? ”
“From cupcakes to cold drinks, many ready-made sweets these days have a high sugar content. Often it happens that cold drinks are casually shipped even when not thirsty, sometimes when feeling depressed, or in a bad emotional state, sweets are consumed to revive the mood. The sugar in it causes the body to secrete a chemical/hormone called dopamine. This dopamine excites the body. Therefore, those who suffer from constant mental and physical stress are usually attracted to sweets. Often such people want to eat sweets during or after a stressful event. The sugars used in these foods are of the glucose, sucrose and dextrose types. So it is absorbed into the bloodstream quickly and the brain feels rejuvenated, but if this keeps happening frequently, in opposite situation i.e. when high amount of sugar is not consumed, the brain feels like it is frozen, then the person craves for sugar again. ”
"So how do you stop this?"
“By cautiously cutting down the sugar little by little. Start exercising. Eat foods that are sweet in taste and also high in fiber e.g. carrots, fruits etc. Drink warm water. ”
"Hmmm, I got a lot of information today. * Plantation White Sugar, Description of Sugar in Ayurveda and Sugar Addiction * I can make good points with all three. ”
"Very good, now our last food substance for tomorrow is 'milk'. Let's find out. "
